3 lbs Russet potatoes, peeled and cubed

Instructions

Place the cubed potatoes, minced onion, garlic, and chicken broth in a large pot.
Bring the mixture to a boil over medium-high heat.
Reduce heat and simmer for 15-20 minutes until the potatoes are tender.
Use a potato masher to smash about half of the potatoes directly in the pot to naturally thicken the soup.
