1 large sweet potato, peeled and cubed
15 ounces canned garbanzo beans, drained and dried
3 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 teaspoon coarse salt
1 cup cooked wild rice
1 cup cooked quinoa
2 cups fresh kale, chopped
1 crisp apple, thinly sliced
1/2 cup smoked gouda, shredded
3 tablespoons tahini
1 tablespoon fresh lemon juice
1 tablespoon maple syrup
2 tablespoons warm water
Preheat oven to 400°F (200°C).
On a large baking sheet, toss the cubed sweet potato and dried garbanzo beans with olive oil, garlic, chili powder, cumin, cinnamon, and salt.
Roast for 25-30 minutes until the sweet potatoes are tender and chickpeas are crispy, tossing halfway through.
In a small bowl, whisk together the tahini, lemon juice, maple syrup, and warm water until smooth to create the dressing.
Divide the cooked wild rice and quinoa into serving bowls.
Top each bowl with roasted sweet potato, chickpeas, fresh kale, and apple slices.
Sprinkle with smoked gouda and drizzle generously with the lemon-tahini dressing before serving.
Store the grains and roasted vegetables in airtight containers in the refrigerator for up to 4 days. Keep the dressing in a separate jar and shake well before serving. Add the apple fresh just before eating to prevent browning.
