A vibrant, nutrient-dense Mediterranean power bowl that perfectly balances earthy roasted sweet potatoes with zesty, crisp vegetables and protein-rich quinoa. This clean, plant-based meal features homemade quick-pickled red onions and a refreshing lemon dressing. It is a colorful, gourmet-inspired dish that is both indulgent and incredibly healthy, making it the perfect choice for a quick lunch or a nourishing dinner.

1 cup sweet potatoes, peeled and cut into 1/2-inch cubes
2 cups kale, washed and torn into bite-sized pieces
1 ripe avocado, sliced
1 cup quinoa, cooked
4 tablespoons hummus
3 tablespoons extra virgin olive oil, divided
1 tablespoon fresh lemon juice
1 cup grape tomatoes, halved
1 Persian cucumber, diced
1 small red onion, thinly sliced
1/2 cup white vinegar
1 teaspoon sugar
Sea salt and cracked black pepper to taste

Instructions

Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then roast for 20-25 minutes until tender and golden.
While the potatoes roast, combine the sliced red onion, white vinegar, and sugar in a small bowl; let sit for at least 15 minutes to quick-pickle.
In a bowl, toss the kale with 1 tablespoon of olive oil and lemon juice, massaging the leaves until softened.
Divide the cooked quinoa into serving bowls.
Top with the roasted sweet potatoes, massaged kale, halved tomatoes, diced cucumber, and sliced avocado.
Add a generous dollop of hummus and a spoonful of the pickled red onions to each bowl.
Drizzle with the remaining tablespoon of olive oil and season with extra salt and pepper if desired.

Notes

You can prep the quinoa, roasted sweet potatoes, and pickled onions up to 3 days in advance for easy meal prep. To prevent browning, add the fresh avocado slices just before serving.
