1 pound Italian turkey or chicken sausage, casings removed
1 tablespoon olive oil
1 medium onion, diced
1 large russet potato, cut into half-inch chunks
7.5-ounce jar of sun-dried tomatoes, drained and chopped
3 cloves garlic, minced
1/2 teaspoon dried Italian seasoning
6 cups low-sodium chicken broth
1 can (15 oz) cannellini beans, rinsed and drained
3 cups baby kale
1/4 cup heavy cream
