It is easy to prepare, forgiving for beginners, and tastes even better as leftovers the next day.
1 pound raw Italian turkey sausage, casings removed
1 medium yellow onion, diced finely
1 cup celery, diced
1 cup carrots, chopped into bite-sized rounds
3 garlic cloves, minced
2 teaspoons Italian seasoning
1 can (15 oz) cannellini beans, drained and rinsed
4 cups low-sodium chicken broth
1 bunch fresh kale, stems removed and leaves chopped
1 tablespoon balsamic vinegar
2 tablespoons olive oil
Salt and black pepper to taste
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add the turkey sausage, breaking it up with a spoon as it cooks until browned, then remove from the pot and set aside.
In the same pot, add onion, celery, and carrots, sautéing until softened, about 5-7 minutes.
Add minced garlic and Italian seasoning, cooking for 1 minute until fragrant.
Return the cooked sausage to the pot and pour in the chicken broth, scraping the bottom of the pot to release any browned bits.
Stir in the cannellini beans and bring the soup to a gentle boil.
Reduce heat to low, cover, and simmer for 15-20 minutes.
Stir in the chopped kale and cook for 3-5 minutes until wilted and tender.
Stir in the balsamic vinegar just before serving and season with salt and pepper to taste.
Store leftovers in an airtight container in the refrigerator for up to 3 days. For a heartier meal, you can add diced potatoes or cooked pasta at the end. Use extra kale if you prefer more greens.
