3 large chicken breasts
2 tsp chili powder
1 tsp ground cumin
1 medium onion, finely chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
1 (28-oz) can diced tomatoes with juice
1 (10-oz) can diced tomatoes and green chilies
1 (15-oz) can black beans, drained and rinsed
1 chipotle pepper in adobo sauce, minced
4 cups chicken broth (low sodium)
Salt and pepper to taste
Fresh lime juice for serving
Fresh cilantro and tortilla strips for garnish

Instructions

Place the chicken breasts at the bottom of the slow cooker.
Season the chicken with chili powder, cumin, salt, and pepper.
Add the onion, bell peppers, tomatoes, beans, chipotle pepper, and chicken broth.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Remove the chicken breasts and shred them using two forks.
Return the shredded chicken to the slow cooker and stir well.
Stir in fresh lime juice before serving.
