1 tablespoon oil
1 tablespoon butter
2 large baking potatoes, peeled and cubed
1 white onion, diced
2 sticks celery, diced
2 garlic cloves, diced
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon oregano
Salt and pepper to taste
2 tablespoons plain flour
500ml milk
500ml vegetable stock
1/2 cup (125ml) sour cream or creme fraiche
75g mature cheddar cheese, shredded
75g vegan bacon lardons
Fresh chives, chopped for garnish

Instructions

Heat oil and butter in a large pot over medium heat.
Add the onion and celery, sautéing until soft and translucent.
Stir in the diced potatoes, garlic, garlic powder, onion powder, smoked paprika, and oregano, cooking for 5 minutes.
Sprinkle the flour over the vegetables and stir well to coat, cooking for 1 minute.
Gradually whisk in the vegetable stock and milk, ensuring no lumps form.
Bring to a simmer and cook for 20-25 minutes until the potatoes are tender.
While soup simmers, crisp the vegan bacon lardons in a separate pan until crunchy.
Stir in the sour cream and half of the cheddar cheese until melted and smooth.
Season with salt and pepper to taste.
Ladle into bowls and top with crispy vegan bacon, remaining cheese, and fresh chives.

Notes

For a smoother consistency, use an immersion blender to partially blend the soup before adding the cheese. Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop.
