2 cups fresh kale, washed and stemmed
10 oz sweet potato, peeled and diced into half-inch cubes
1 tablespoon avocado oil
15 oz can chickpeas, rinsed and drained
1/2 avocado, sliced thinly
1/2 red onion, thinly sliced
1/3 cup plant-based sour cream or yogurt
1 1/2 tablespoon sriracha
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon finely ground sea salt
Juice from 1 lemon

Instructions

Whisk the black pepper, paprika, garlic powder, and sea salt together in a small bowl.
Heat a non-stick pan over medium heat and add the avocado oil.
Add the cubed sweet potatoes and sauté for several minutes.
Sprinkle the seasoning mix over the potatoes and stir to coat evenly.
Continue cooking the potatoes, stirring occasionally, until tender and caramelized.
Add the rinsed chickpeas to the pan during the last few minutes of cooking to warm through and toast slightly.
While vegetables cook, whisk the plant-based sour cream, sriracha, and lemon juice together to form the sauce.
Arrange the fresh kale in two serving bowls.
Top with the warm sweet potato and chickpea mixture.
Add the sliced avocado and red onion.
Drizzle with the spicy sriracha sauce before serving.

Notes
