Ingredients

1 lb sirloin steak, sliced into strips
1 cup uncooked white rice
3 cups vegetable broth (or water)
1 tablespoon cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
4 oz cheddar cheese, grated
1/2 cup evaporated milk
1/2 cup diced green chiles (canned or fresh)
2 cloves garlic, minced
1 small onion, finely chopped
Salt and pepper to taste
1 tsp olive oil (for searing)
Optional: diced tomatoes, cilantro, or jalapeños for garnish

Instructions

Heat olive oil in a skillet over medium-high heat
Sauté onion and garlic until fragrant
Add steak strips and cook until browned (3-4 minutes)
Stir in cumin, paprika, and garlic powder; add broth/water
Bring to a boil, reduce heat, cover, and simmer 18 minutes
Meanwhile, make queso: melt cheddar with evaporated milk, green chiles in a saucepan until smooth
Fluff rice with a fork and top with queso sauce before serving
