1.5 lbs red potatoes, cut into bite-size chunks
2 cups carrots, sliced
1 cup yellow onion, diced
1 cup celery, sliced
3 cups unsalted chicken broth, warmed
1 tbsp beef base
1 tbsp Worcestershire sauce
1 tbsp minced fresh rosemary
2 tsp minced fresh thyme
2 cloves garlic, minced
1 tsp salt
0.5 tsp black pepper

Instructions

Heat a large skillet over medium-high heat and brown the ground beef until cooked through; drain excess fat.
Transfer the browned beef into the slow cooker.
Add the potatoes, carrots, onions, celery, and garlic to the slow cooker.
In a small bowl, whisk together the warm chicken broth, beef base, Worcestershire sauce, rosemary, thyme, salt, and pepper.
Pour the broth mixture over the beef and vegetables in the slow cooker.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the vegetables are tender.
Stir well before serving; add up to 1 cup of extra broth if a thinner consistency is desired.
