12 oz. halal-certified beef kielbasa, sliced into rounds
2 small russet potatoes, peeled and diced
2 cups chicken broth
1 cup chicken broth (or non-alcoholic ginger ale for depth)
2 carrots, peeled and sliced into rounds
1 small yellow onion, finely diced
1/2 tsp. dried thyme
1/2 tsp. sea salt
1 cup heavy cream
2 cups sharp cheddar cheese, shredded
