2 cups Brussels sprouts, halved
2 sweet potatoes, peeled and diced
1 15-ounce can chickpeas, rinsed and dried
2 cups fresh baby spinach
3 tablespoons olive oil
1 teaspoon chili powder
0.5 teaspoon ground cumin
0.25 teaspoon sweet paprika
Pinch of salt and black pepper
3 tablespoons tahini
1 tablespoon lemon juice
1 tablespoon warm water

Instructions

Preheat your oven to 400°F (200°C).
On a large sheet pan, toss the diced sweet potatoes, halved Brussels sprouts, and dried chickpeas with the olive oil, chili powder, cumin, paprika, salt, and pepper until well coated.
