2 cups kale, de-stemmed and chopped
2 teaspoons extra-virgin olive oil for kale
1/8 teaspoon kosher salt for kale
4 medium sweet potatoes, peeled and quartered
2 tablespoons extra-virgin olive oil for roasting
1 teaspoon kosher salt for potatoes
1 teaspoon ground cumin
1 can black beans, rinsed and drained
1/2 cup Greek yogurt
1 tablespoon chipotle in adobo sauce
1 tablespoon lime juice
1/2 cup pickled red onions
1/4 cup fresh cilantro, chopped

Instructions

Preheat oven to 400°F (200°C).
Toss peeled and quartered sweet potatoes with 2 tablespoons olive oil, salt, and cumin on a sheet pan.
Roast potatoes for 25-30 minutes until tender and caramelized, tossing halfway through.
While potatoes roast, place chopped kale in a bowl with 2 teaspoons olive oil and 1/8 teaspoon salt; massage with your hands until soft.
In a small bowl, whisk together Greek yogurt, chipotle in adobo sauce, and lime juice until smooth.
Assemble the bowls by layering the massaged kale, roasted sweet potatoes, and black beans.
Top with quick-pickled onions and fresh cilantro, then drizzle generously with the smoky chipotle lime yogurt sauce.
