1 large butternut squash (about 3 pounds, peeled and seeded and cubed)
4 tablespoons olive oil (divided)
1.5 teaspoons salt (divided)
0.5 small sweet onion (finely diced)
3 garlic cloves (finely minced)
1 tablespoon fresh ginger (grated)
0.5 teaspoon cinnamon
4 cups vegetable broth
1 can (13.5 oz) full-fat coconut milk
Preheat your oven to 400°F (200°C).
