Zest of 1 orange

Instructions

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Wash and dry the acorn squashes, then cut them in half and remove the seeds with a spoon.
Slice the squash into 1/2-inch thick rings.
In a large bowl, whisk together the olive oil, cumin, coriander, salt, smoked paprika, black pepper, cinnamon, and orange zest.
Toss the squash rings in the oil mixture until evenly coated.
Arrange the rings in a single layer on the prepared baking sheet.
Roast for 25 to 30 minutes, turning halfway through, until the squash is tender and deeply caramelized.
