2 tablespoons olive oil
1 yellow onion, finely diced
2 large stalks celery, diced
3 cloves garlic, minced
1 large sweet potato, peeled and cut into half-inch cubes

1 teaspoon dried thyme
1/4 teaspoon red pepper flakes
1 cup pearl barley, rinsed
1 can (15 oz) pumpkin purée
6 cups vegetable broth
3 cups curly kale, chopped and stems removed
