1 tbsp olive oil
1 large yellow onion, diced
1 red bell pepper, chopped
2 tsp diced garlic
1 tsp fresh ground ginger
2 lb butternut squash, peeled and cubed
1 medium apple, peeled, cored and chopped
1 tsp dried sage
1/8 tsp chili powder
1/4 tsp sea salt
3 cups alcohol-free chicken stock
3 oz goat cheese or cream cheese
1/3 cup Parmesan cheese
Salted pepitas for garnish

Instructions

Set the Instant Pot to the Saute function and heat the olive oil.
Add the onion and red bell pepper, cooking until softened.
Stir in the garlic and fresh ginger, cooking for about one minute until fragrant.
Add the cubed butternut squash, chopped apple, sage, chili powder, and sea salt.
Pour in the chicken stock and stir to combine, scraping any browned bits from the bottom.
Secure the lid and set the pressure release valve to Sealing position.
Cook on High Pressure for 8 minutes.
Allow a natural pressure release for 5 minutes, then perform a quick release for any remaining pressure.
Carefully open the lid and stir in the goat cheese and Parmesan until fully melted and smooth.
Use an immersion blender to puree the soup until velvety smooth.
Serve warm, topped with a sprinkle of salted pepitas.

Notes

Ensure your chicken stock is strictly alcohol-free. For a vegetarian option, substitute chicken stock with high-quality vegetable stock. If the soup is too thick, add a small splash of broth until the desired consistency is reached.
