2 ripe peaches
1 pint cherry tomatoes
8 oz burrata cheese
4 cups mixed greens (e.g., arugula, spinach)
3 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
2 tbsp honey
1 small shallot, minced
1 clove garlic, minced
1 tbsp fresh basil, chopped
1 tbsp fresh oregano, chopped
1 tbsp fresh dill, chopped
1 tsp fresh thyme
Pinch of red pepper flakes
Salt and pepper to taste
Prep peaches (thinly sliced) and tomatoes (halved)
Tear burrata into serving bowls
