12 ounces short pasta (corkscrew, shells, or farfalle)
5 cups pumpkin or Kabocha squash, peeled and cubed
1 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons olive oil (plus more for dressing)

1/2 cup dried cranberries
1 Gala or Honeycrisp apple, diced
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
