One-Pot Shrimp Orzo is a quick, flavorful dinner where succulent shrimp and tender orzo simmer together in garlicky broth, finished with fresh herbs and bright lemonโ€”minimal cleanup, maximum comfort.

  • 1 cup orzo pasta
  • 1 lb shrimp (peeled and deveined)
  • 4 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1/2 cup fresh parsley (chopped)
  • 2 tablespoons lemon juice

Instructions

1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sautรฉ until fragrant, about 1 minute.

2. Add the shrimp and cook until pink and opaque, about 3 to 4 minutes.

3. Stir in the orzo and chicken broth and bring to a gentle boil. Reduce the heat and simmer for about 10 minutes, until the orzo is al dente.

4. Remove from the heat, then stir in the lemon juice and chopped parsley.

5. Serve warm, garnished with additional parsley if desired.

Notes

For extra brightness, add a little lemon zest along with the juice.

If you like it saucier, stir in a splash of broth at the end before serving.

Swap parsley for basil or dill for a different herb vibe.
