1 onion, finely diced
2 cloves garlic, crushed
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon olive oil
1 lb pumpkin, peeled and cubed
1 can (15 oz) chickpeas, drained and rinsed
1 can (14.5 oz) diced tomatoes
2 cups vegetable broth
Salt and pepper to taste
Fresh cilantro for garnish
Heat olive oil in a large pot over medium heat.
Add the onion and sauté until translucent, about 5 minutes.
Add garlic, cayenne, cumin, and coriander, stirring for 1 minute until fragrant.
Add the cubed pumpkin and cook for 3 minutes to coat in spices.
Pour in the diced tomatoes and vegetable broth.
