3 lbs butternut squash, peeled, seeded, and cut into 1-inch cubes
1 can (13.5 oz) full-fat coconut milk
4 cups vegetable broth
1 large yellow onion, diced
2 cloves garlic, minced
1 tbsp coconut oil
1 tbsp curry powder
1/2 tsp ground ginger
Salt and black pepper to taste
