This Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake is a cheesy, comforting casserole that blends seasoned ground beef, rotini pasta, sweet corn, and ranch flavor into one irresistible dish. Perfect for family dinners or casual gatherings.

  • 1 pound ground beef
  • 1 packet (1 ounce) ranch dressing mix
  • 2 cups uncooked rotini pasta
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15.25 ounces) sweet corn, drained
  • 1 can (10.75 ounces) condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • Salt and pepper to taste
  • 1⁄4 cup fresh parsley, chopped (optional for garnish)

Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.

2. Cook rotini pasta according to package directions until al dente. Drain and set aside.

3. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3–4 minutes until translucent.

4. Add minced garlic and cook for 1 more minute until fragrant.

5. Add ground beef and cook until browned and cooked through, breaking it apart with a spoon.

6. Drain excess fat, then stir in ranch dressing mix until beef is evenly coated.

7. Add drained sweet corn, cream of mushroom soup, sour cream, and 1 cup shredded cheddar cheese. Stir to combine and season with salt and pepper.

8. Add cooked rotini and mix until pasta is fully coated.

9. Transfer mixture to prepared baking dish and sprinkle remaining 1 cup of cheddar cheese on top.

10. Bake for 20–25 minutes, until cheese is melted and bubbly.

11. Let rest for 5 minutes before serving.

12. Garnish with chopped parsley if desired.

Notes

Try adding crumbled bacon to the mixture before baking for extra richness.

Ground chicken or turkey can be used as a leaner alternative to beef.

Use frozen corn instead of canned for a fresher flavor.
