1 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
4 cups fresh kale, chopped
2 cups sun-dried tomatoes (no oil, 3 oz net weight)
4 cups chicken broth
1 cup heavy cream
2 tbsp tomato paste
2 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
2 tbsp butter
1 tbsp coconut oil (optional for richness)
1/4 cup grated Parmesan (optional)
Heat olive oil in a large pot. Sauté onion and garlic until softened
Brown sausage, breaking into small pieces
