A vibrant, low-carb salad combining tender grilled chicken, fresh Mediterranean veggies, tangy feta, briny olives, and a creamy avocado-olive oil dressing. Keto-friendly, packed with healthy fats and bold flavors, ready in minutes for a satisfying, no-cook meal with a Mediterranean twist.

Ingredients

450g cooked chicken breast, grilled or pan-seared, shredded
3 cups diced English cucumber
1 medium red onion, thinly sliced and sautéed
300g cherry tomatoes, halved
1/4 cup pitted kalamata olives
100g crumbled feta cheese
1 tbsp capers (rinsed)
200g mashed ripe avocado
2 tbsp extra virgin olive oil
2 tbsp fresh lemon juice, strained
2 tbsp chopped fresh dill
Salt and freshly ground black pepper, to taste

Instructions

Cook and shred chicken breast until done; let cool
Dice cucumber, halve cherry tomatoes, and prep sliced red onion with vinegar
In a bowl, combine shredded chicken, cucumber, cherry tomatoes, kalamata olives, capers, and feta cheese
Whisk together mashed avocado, olive oil, lemon juice, dill, salt, and pepper for the dressing
Pour dressing over salad and toss until evenly coated
Chill for 15 minutes before serving to enhance flavors

Notes

For a creamier texture, add an extra mashed avocado
Skip capers if desired, or rinse them well for less brininess
Store leftovers in an airtight container in the fridge for 2-3 days
