1 pound Italian turkey sausage links, casings removed
1 medium onion, finely chopped
1 medium green bell pepper, sliced into strips
1 medium red or yellow bell pepper, sliced into strips
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14.5 ounces) diced tomatoes, undrained
1 jar (14 ounces) premium pizza sauce
2 teaspoons Italian seasoning
2 cloves garlic, minced
4 cups beef or vegetable broth
1 cup shredded mozzarella cheese for serving
Fresh parsley for garnish (optional)

Instructions

Brown the turkey sausage in a skillet over medium-high heat until fully cooked, breaking it into crumbles.
Transfer the cooked turkey sausage to a slow cooker.
Add the onion, green bell pepper, red or yellow bell pepper, cannellini beans, diced tomatoes with their juice, pizza sauce, Italian seasoning, garlic, and broth to the slow cooker.
Stir well to ensure all ingredients are combined.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the vegetables are tender.
Once cooked, stir the soup well.
Ladle hot soup into bowls and garnish generously with shredded mozzarella cheese.
Serve immediately while warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave. You can also add some cooked small-shell pasta to the soup during the last 30 minutes of cooking for a heartier texture. For those who prefer a spicier kick, add a pinch of crushed red pepper flakes.
