1 tablespoon butter
1 medium onion, diced
3 cloves garlic, minced
7-8 medium russet potatoes, peeled and cut into 1 inch cubes
3 cups chicken broth
1 can (10.5 oz) cream of chicken soup
2 cups sharp cheddar cheese, shredded
1 teaspoon black pepper
