1 tbsp olive oil
1 lb chicken breast, boneless and skinless
2 jalapeños, seeded and diced
3 cloves garlic, minced
1 onion, diced
4 cups chicken broth (halal certified)
2 cups frozen or canned corn kernels
1 can (15 oz) cannellini beans, rinsed and drained
1 tsp ground cumin
1 tsp smoked paprika
4 oz cream cheese, softened
1/2 cup sour cream
Salt and black pepper to taste
Fresh cilantro for garnish
Set the Instant Pot to the Sauté function and heat the olive oil.
Add the onion, garlic, and diced jalapeños, sautéing until softened.
Add the chicken breasts, broth, corn, beans, cumin, and paprika to the pot.
Secure the lid and set the valve to sealing; cook on Manual High Pressure for 10 minutes.
Allow for a natural pressure release for 10 minutes before performing a quick release.
Remove the chicken and shred it using two forks, then return it to the pot.
Stir in the cream cheese and sour cream until the soup is smooth and velvety.
Season with salt and pepper to taste and serve warm with a sprinkle of fresh cilantro.
Adjust the heat level by adding more jalapeños or keeping the seeds for extra spice. For a thicker consistency, use an immersion blender to partially puree a portion of the soup before adding the cream. Store leftovers in an airtight container for up to 3 days.
