3/4 cup dry farro
2 Tbsp honey
2 Tbsp fresh lemon juice
1 tsp fresh thyme leaves, finely chopped
Pinch of chili flakes
8 oz halloumi cheese, drained and patted dry
1 to 2 Tbsp extra-virgin olive oil
1 large bunch kale, stemmed and chopped
1 large Honeycrisp apple, thinly sliced

Instructions

Cook the farro in boiling salted water according to package directions, then drain and set aside to cool.
In a small bowl, whisk together the honey, lemon juice, chopped thyme, and chili flakes to create the glaze.
Cut the halloumi into 1/2-inch thick slices and pat them very dry with paper towels to ensure a good sear.
Heat olive oil in a non-stick skillet over medium-high heat. Add halloumi slices and cook until golden brown on both sides.
While the cheese is still in the pan, drizzle the honey-thyme glaze over the halloumi and toss gently for 30 seconds until the cheese is coated and sticky.
Massage the kale in a large bowl with a tablespoon of olive oil until softened.
Combine the kale and cooked farro in a serving bowl, top with sliced Honeycrisp apples and the warm glazed halloumi.
Serve immediately while the cheese is warm.
