4 bone-in, skin-on chicken thighs
2 tablespoons olive oil
2 tablespoons soy sauce (low sodium)
2 tablespoons fresh lime juice
2 tablespoons honey
1 teaspoon minced garlic
1/2 teaspoon grated ginger
Chopped cilantro or sesame seeds (optional, for garnish)

Instructions

Heat olive oil in a skillet over medium-high heat. Add chicken thighs, skin-side down, and cook until golden brown, 5-7 minutes.
Turn thighs and cook 4-5 more minutes until browned.
In a bowl, mix soy sauce, lime juice, honey, garlic, and ginger. Brush glaze over chicken.
Reduce heat to medium. Cook 3-4 minutes per side, until glaze caramelizes and chicken is cooked through (internal temperature 165°F).
Let rest 5 minutes before serving.

Notes

Marinate thighs in glaze (except honey) for 15-30 minutes for extra flavor.
Serve with white/jeera rice, steamed broccoli, or salad.
