Tender honey BBC chicken served with crispy, garlicky Parmesan potatoes for a sweet, savory, and cheesy comfort dish. Perfect for gatherings or simple weeknight meals.

4 boneless, skinless chicken breasts or thighs (1.5 lbs)
1/4 cup ketchup
2 tablespoons honey
1 tablespoon apple cider vinegar
1 teaspoon Worcestershire sauce (alcohol-free if needed)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
4 large potatoes, peeled and cubed
2 tablespoons olive oil
2 cloves garlic, minced
1/4 cup Parmesan cheese (shredded)
1 teaspoon kosher salt
1/2 teaspoon black pepper

Instructions

Preheat oven to 450°F (230°C)
In a bowl, mix ketchup, honey, vinegar, Worcestershire sauce, garlic powder, and onion powder to create the BBQ sauce
Place chicken in a baking dish, pour half the sauce over it, and marinate for 5 minutes
Bake chicken for 20-25 minutes, basting with remaining sauce halfway through
Meanwhile, toss potato cubes with olive oil, garlic, salt, and pepper on a baking sheet
Bake potatoes for 20-22 minutes until golden
Sprinkle Parmesan over potatoes and broil 1-2 minutes for a golden crust
Remove both from oven and serve together

Notes

Use vegetable chicken if preparing ahead
For extra flavor, add 1/2 tsp smoked paprika to the potato mixture
Store leftovers in an airtight container for up to 4 days
