4 boneless, skinless chicken breasts
3/4 cup honey
1/4 cup lime juice (about 4 limes)
2 garlic cloves, minced
1 1/2 teaspoons paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 ripe mango, diced
1/4 cup red onion, finely chopped
1/4 cup chopped cilantro
1 jalapeño, seeded and minced
1 tablespoon lime juice
1/4 teaspoon chili flakes (optional)
In a bowl, combine honey, lime juice, garlic, paprika, cumin, salt, and pepper. Add chicken; coat evenly. Marinate 30 minutes to 2 hours.
Heat oil in a skillet or grill over medium-high. Cook chicken 6-7 minutes per side, until internal temperature reaches 165°F.
For salsa: Combine mango, onion, cilantro, jalapeño, lime juice, and chili flakes (if using). Mix gently.
