Succulent chicken skewers glazed with a sticky, smoky-sweet chipotle and honey marinade. Perfect for backyard barbecues or weeknight dinners, these skewers deliver bold heat and caramelized char from the grill.

Ingredients

1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch cubes
1/4 cup olive oil
2 chipotle peppers in adobo sauce, minced
3 tablespoons honey
2 tablespoons soy sauce (gluten-free if needed)
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional)
Lime juice to taste
12 bamboo skewers, soaked in water for 20 minutes

Instructions

In a large bowl, whisk together olive oil, chipotle, honey, soy sauce, garlic, smoked paprika, cumin, cayenne (if using), and lime juice to form marinade.
Add chicken cubes to the bowl and toss to coat. Cover and refrigerate for 1-2 hours.
Thread marinated chicken onto pre-soaked skewers, leaving 1/2 inch between chunks to allow even cooking.
Preheat grill to medium-high heat. Lightly oil the grates.
Grill skewers 8-10 minutes total, rotating often, until chicken is cooked through and caramelized. Brush with additional marinade during last 2 minutes of grilling.

Notes

For extra smokiness, use a charcoal grill and add wood chips to the coals.
Serving suggestion: Pair with grilled corn and zucchini for a complete BBQ feast.
Refrigerate leftovers within 2 hours of grilling. Consume within 3 days.
