1 cup cooked quinoa
1 cup thawed frozen edamame
1/2 cup thawed frozen green peas
1 cup chopped cucumber
2 celery stalks, chopped
1 cup chopped fresh spinach
1/4 cup chopped scallions
1/4 cup chopped cilantro
2 tbsp toasted sesame seeds
3 tbsp tamari (low sodium)
1 tbsp rice vinegar
1 tbsp maple syrup
1 tsp toasted sesame oil
1 tsp lime juice
Cook quinoa according to package instructions and let cool
Chop all fresh vegetables and greens and mix into a bowl
In a separate jar, whisk together tamari, rice vinegar, maple syrup, sesame oil, and lime juice to make the dressing
