1 lb boneless chicken thighs or breasts, cut into pieces
4 cups low-sodium chicken broth
2 tbsp olive oil
1 onion, chopped
2 celery stalks, diced
3 garlic cloves, minced
3 carrots, sliced
2 potatoes, cubed
1 cup chopped kale or spinach
1 bay leaf
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste

Instructions

Heat olive oil in a large pot and sauté onion and celery
Add garlic and cook 2 minutes until fragrant
Stir in chicken pieces and cook until lightly browned
Pour in broth and bring to a boil
Add carrots, potatoes, bay leaf, thyme, and rosemary
Reduce heat, cover, and simmer 30 minutes
Stir in kale or spinach and cook 10 more minutes
Season with salt and pepper to taste
