This Healthy Zuppa Toscana is a lightened-up, pantry-friendly version of the classic Italian comfort soup. By substituting high-fat pork for lean ground turkey and replacing heavy cream with creamy unsweetened coconut milk, this recipe remains dairy-free, Paleo, and Whole30-friendly. It is packed with nutrient-dense potatoes and vibrant kale, simmered in a savory, herb-infused broth that tastes like it has been cooking for hours. Perfect for busy weeknights, this one-pot meal is satisfying, rustic, and incredibly easy to prepare.
1 tablespoon olive oil
1 pound ground Italian turkey or poultry sausage, casings removed
1 medium yellow onion, finely chopped
6 cloves garlic, finely minced
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes
2 lbs yellow or russet potatoes, peeled and cut into bite-sized pieces
4 cups high-quality chicken broth
2 cups unsweetened coconut milk
1/2 teaspoon sea salt, plus more to taste
3-4 cups fresh kale, stems removed and leaves chopped
Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the ground turkey sausage and cook until browned, breaking it up with a wooden spoon.
Stir in the onion and cook until softened, about 5 minutes, then add the minced garlic, basil, oregano, thyme, and red pepper flakes.
Add the potatoes and chicken broth, stirring well to combine.
Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
Stir in the coconut milk and season with sea salt.
Fold in the kale and cook for 2-3 minutes until the leaves are bright green and wilted.
Use a carton-style unsweetened coconut milk rather than canned coconut milk for a lighter texture. The soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
