Ingredients

12 oz whole wheat rotini pasta
1 can (5 oz) light tuna in water, drained
1 red bell pepper, diced
1 cup cucumber, diced
1/2 cup cherry tomatoes, halved
3 tbsp extra virgin olive oil
2 tbsp red wine vinegar
1 tbsp Dijon mustard
1 clove garlic, minced
1/2 cup kalamata olives, halved
1/4 cup crumbled feta cheese
1 tsp dried oregano
Salt and pepper to taste
Fresh parsley and dill for garnish

Instructions

Cook pasta according to package instructions, drain, and rinse under cold water
Combine cooked pasta, red bell pepper, cucumber, cherry tomatoes, and kalamata olives in a large bowl
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper
Pour dressing over the pasta and vegetable mixture, toss until well coated
Fold in feta cheese gently to preserve its texture
Chill for at least 30 minutes before serving
Garnish with fresh parsley and dill

Notes

For richer flavor, let the salad sit in the fridge for 1-2 hours
Optional: add 1 tbsp capers for extra tang
