A vibrant and refreshing summer salad featuring peppery arugula, succulent peaches, crisp cucumber, creamy avocado, and sweet blueberries, all tied together by a zesty lemon tahini dressing. Light, healthy, and bursting with flavor.
4 cups baby arugula
2 ripe peaches, sliced
1 cup cucumber, diced
1 cup fresh blueberries
1 avocado, diced
1/4 cup tahini
2 tablespoons freshly squeezed lemon juice
1 teaspoon honey (or maple syrup)
1 clove garlic, minced
Salt and freshly ground black pepper to taste
2 tablespoons water (as needed for desired dressing consistency)
Wash the arugula and pat it dry. Arrange it in a large salad bowl.
Add the sliced peaches, diced cucumber, blueberries, and avocado to the bowl.
In a small bowl, whisk together the tahini, lemon juice, honey, minced garlic, salt, and pepper. Gradually add water while whisking until the dressing reaches a smooth and creamy consistency.
Pour the dressing over the salad and toss gently to coat all the ingredients. Taste and adjust seasoning if needed.
Serve immediately for the best texture and flavor.
You can prepare the dressing in advance and store it in the refrigerator for up to 3 days.
If you do not have ripe peaches, substitute with nectarines or a mixture of other stone fruits.
