This healing slow cooker carrot soup is creamy, flavorful, and the perfect healthy comfort food. It’s made with two pounds of carrots and packed with anti-inflammatory ingredients like fresh ginger and turmeric. This recipe is also dairy free, paleo, whole30, vegan, and SCD friendly.

Ingredients

  • 2 lbs carrots (about 1012 large carrots), peeled and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup light coconut milk
  • ½ teaspoon apple cider vinegar
  • 1 tablespoon freshly grated ginger
  • ½ teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ¼ teaspoon paprika
  • Salt and pepper to taste

Instructions

1. Add all of the ingredients to the slow cooker. Cook on high for 3–4 hours or low for 4–6 hours, until the carrots are soft.

2. Blend with an immersion blender until smooth and creamy. If you don’t have an immersion blender, use a regular blender and blend in batches.

3. Season with salt and pepper to taste. Serve warm and enjoy!

Notes

To make on the stovetop: Sauté onions and garlic in olive oil until softened, about 5–7 minutes. Add carrots and cook for 5 more minutes. Add broth, coconut milk, and remaining ingredients. Simmer for 30 minutes or until carrots are soft. Blend until smooth and serve warm.

Storage: Keeps in the fridge up to 4 days or freeze for several months. This soup is great for meal prep and reheats well.
