3 medium acorn squash, halved and seeds removed
5 teaspoons extra-virgin olive oil, divided
3 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
1 pound ground turkey
1/2 cup onion, finely chopped
1/2 cup celery, diced
1 Honeycrisp apple, diced
1/2 cup dried cranberries
1 cup cooked quinoa
1 teaspoon dried sage
1 teaspoon dried thyme
2 cloves garlic, minced
Preheat your oven to 400°F (200°C).
Brush the cut sides of the acorn squash with 2 teaspoons of olive oil and season with 1 teaspoon of salt and 1/2 teaspoon of pepper.
Place squash cut-side down on a baking sheet and roast for 30-35 minutes until tender.
