12 oz fettuccine or penne pasta
2 tbsp olive oil
6 garlic cloves, minced
1 cup heavy cream or full-fat coconut milk (for lactose-free option)
1 cup freshly grated Parmesan cheese
1 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)
2 tbsp chopped fresh parsley

Instructions

Bring a large pot of salted water to a boil for pasta.
Season chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium-high heat, add chicken, and cook 5-6 minutes per side until browned and nearly cooked through.
Add garlic, red pepper flakes (if using), and continue cooking 2 minutes until fragrant.
Stir in heavy cream or coconut milk and Parmesan, simmering 5 minutes until thickened.
Place cooked pasta in the skillet and toss with the sauce, or add pasta to the pan during the last 2 minutes of boiling. Drain and combine with the sauce.
Garnish with parsley before serving.
