Ingredients

1 delicata squash, halved, seeded, and sliced into 1-inch pieces
1 lb Brussels sprouts, halved lengthwise
3 tbsp olive oil, divided
4 tbsp McCormick Salad Supreme seasoning, divided
2 boneless, skinless chicken breasts
1 head green leaf lettuce, sliced into 1-inch strips
1 bunch lacinato kale, ribs removed and sliced
1 red apple, cored and diced
1/4 cup apple cider vinegar
1 tbsp Dijon mustard
1 tbsp honey

Instructions

Preheat your oven to 400°F (200°C).
Toss the sliced delicata squash and Brussels sprouts with 2 tablespoons of olive oil and 2 tablespoons of the Salad Supreme seasoning on a large baking sheet.
Roast the vegetables for 20-25 minutes until tender and caramelized.
While vegetables roast, season the chicken breasts with 1 tablespoon of Salad Supreme seasoning and grill or pan-sear until fully cooked through.
In a small jar, whisk together the remaining olive oil, apple cider vinegar, Dijon mustard, honey, and remaining Salad Supreme seasoning to create the dressing.
In a large bowl, combine the kale and green leaf lettuce.
Slice the cooked chicken into bite-sized strips.
Top the greens with the roasted vegetables, sliced chicken, and diced fresh apples.
Drizzle with the prepared dressing and toss gently before serving.

Notes

Store the dressing separately from the salad greens to keep them crisp if meal prepping for the week. You can substitute the chicken with chickpeas for a vegetarian version.
