3 large sweet potatoes, peeled and cubed
12 ounces Brussels sprouts, quartered
4 boneless, skinless chicken thighs
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper

1/3 cup pecans, toasted
1/3 cup dried cranberries
2 tablespoons honey
