4-5 medium ripe tomatoes (about 2 lbs), washed and quartered
12 oz fresh mozzarella cheese (about 1 ½ cups), cut into 1″ cubes
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar or fresh lemon juice
½ cup chopped fresh basil leaves
Fine sea salt, to taste
Freshly ground black pepper, to taste

Instructions

Wash and quarter the tomatoes
Cube the mozzarella cheese
In a large bowl, combine the tomatoes and mozzarella
Drizzle with olive oil and vinegar or lemon juice
Gently toss to coat
Add chopped basil, salt, and pepper
Let the salad sit for at least 10-15 minutes before serving

Notes

Use the juiciest, ripest tomatoes available
Letting the salad rest improves flavor melding
Substitute basil with fresh oregano if desired
For a richer texture, use burrata instead of mozzarella
