1/4 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon pure maple syrup
1 teaspoon Dijon mustard
1 clove garlic, minced
Dash of salt
Dash of ground black pepper
10 ounces fresh spinach
2 large Honeycrisp apples, cored and thinly sliced
1 large avocado, sliced
1/4 red onion, thinly sliced
1 cup roughly chopped pecans
3/4 cup crumbled feta cheese

Instructions

Whisk olive oil, balsamic vinegar, maple syrup, Dijon mustard, minced garlic, salt, and pepper in a small bowl until emulsified.
Place fresh spinach in a large salad bowl.
Add the thinly sliced apples, avocado slices, and red onion to the spinach.
Sprinkle the chopped pecans and crumbled feta cheese over the top.
Drizzle the dressing over the salad just before serving.
Toss gently to coat and serve immediately.

Notes

Use a mandoline for perfectly uniform apple slices. If preparing ahead, keep the dressing separate and add the avocado only at the time of serving to prevent browning. You can substitute pecans with walnuts or almonds, and feta with goat cheese for a creamier finish.
