1 lb ground turkey or chicken sausage (browned, drained, and crumbled)
1 can (15 oz) Italian diced tomatoes
4 cups low-sodium vegetable or chicken broth
8 oz cream cheese, cubed
1 bag (20 oz) frozen cheese tortellini
2 cups fresh baby spinach
1 teaspoon garlic powder
1/2 teaspoon dried Italian seasoning

Instructions

In a skillet over medium heat, brown the ground turkey or chicken sausage until fully cooked. Drain excess fat.
Transfer the cooked sausage to the slow cooker.
Add the diced tomatoes, broth, garlic powder, and Italian seasoning to the slow cooker and stir well.
Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
Thirty minutes before serving, add the cubed cream cheese, frozen tortellini, and fresh spinach to the broth.
Stir well, cover, and let cook for an additional 20-30 minutes, or until the tortellini is tender and the cream cheese is fully melted and incorporated.
Serve hot.
