This comforting deconstructed cabbage roll soup offers all the savory satisfaction of traditional golabki without the tedious rolling process. By simmering seasoned ground beef, tender cabbage, carrots, and rice in a rich fire-roasted tomato broth, this effortless one-pot slow cooker meal becomes a hearty, family-friendly dinner that practically prepares itself during a busy workday.
1 large onion, finely diced
1 pound turkey bacon, diced
1 pound ground lean beef
3 cloves garlic, minced
1 cup fresh carrots, chopped into rounds
5 cups green cabbage, chopped into bite-sized pieces
1 (28 oz) can fire-roasted diced tomatoes
1 (16 oz) can tomato sauce
6 to 8 cups beef broth
3/4 cup long grain white rice, uncooked
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt and pepper to taste
Brown the ground beef and turkey bacon in a skillet over medium heat until cooked through, draining any excess fat.
Transfer the cooked meat to a 6-quart slow cooker.
Add the onion, garlic, carrots, cabbage, fire-roasted tomatoes, tomato sauce, beef broth, Worcestershire sauce, thyme, and paprika to the slow cooker.
Stir well to combine all ingredients.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Stir in the uncooked rice during the last 45 minutes of cooking time.
Season with salt and pepper to taste before serving.
Leftovers store beautifully in an airtight container for up to 4 days and often taste even better the next day. If the soup becomes too thick after storing, add a splash of beef broth when reheating. You can substitute the rice with cooked cauliflower rice if preferred, but reduce the cooking time to prevent it from becoming too soft.
