Cabbage Roll Soup is a hearty and comforting dish that captures all the flavors of traditional cabbage rolls in an easy, one-pot soup. With tender ground beef, rice, and cabbage simmered in a savory tomato broth, it’s perfect for chilly evenings and busy weeknights.

Ingredients

  • 2 tsp. vegetable oil
  • 1 lb. lean ground beef
  • Salt and pepper, to taste
  • 1 medium yellow onion, diced finely
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 (8 oz.) cans tomato sauce
  • 1/2 cup white rice, uncooked
  • 1 bay leaf
  • 3 tbsp. light brown sugar
  • 2 tbsp. fresh chopped parsley

Instructions

1. In a Dutch oven or large soup pot, heat vegetable oil over medium-high heat.

2. Add ground beef and season with salt and pepper. Cook until browned.

3. Add diced onion and minced garlic. Cook for 2–3 minutes, until onions are tender.

4. Stir in chopped cabbage, carrots, tomato sauce, beef broth, white rice, bay leaf, and brown sugar.

5. Bring the soup to a simmer and cook for about 25 minutes, until the rice is tender.

6. Remove the bay leaf and stir in fresh chopped parsley.

7. Serve hot and enjoy!

Notes

For a deeper flavor, use fire-roasted tomato sauce or add a splash of Worcestershire sauce.

This soup reheats well and can be made ahead—great for meal prep or leftovers.

Substitute ground turkey or pork for a different protein twist.

Add a pinch of red pepper flakes for a subtle heat.
