2 tablespoons extra-virgin olive oil
1 medium yellow onion, finely chopped
2 celery ribs, finely chopped
5 garlic cloves, minced
1/2 teaspoon chili flakes
1 pound peeled and cubed butternut squash
8 thyme sprigs
1 (15-ounce) can Great Northern beans, rinsed and drained
4 cups vegetable broth
1 bunch kale, stems removed and leaves chopped
Salt and black pepper to taste
Heat olive oil in a large pot over medium heat.
Add onion and celery, sautéing until softened, about 5 minutes.
Stir in garlic and chili flakes, cooking for 1 minute until fragrant.
