This fiber-rich, low-calorie dish utilizes a savory base of green cabbage, crisp peppers, and celery simmered in a rich broth. 6 large green onions, finely chopped
1 can (28 oz) diced tomatoes, undrained
1 large head green cabbage, roughly chopped
3 cans water (using the empty tomato can)
2 large green bell peppers, diced
1 full bunch celery, thinly sliced
2 packets alcohol-free beef-flavored onion soup mix (halal certified)

Instructions

Place all chopped vegetables in a large stockpot.
Add the undrained diced tomatoes and the beef-flavored onion soup packets.
Pour in 3 full cans of water using the tomato can as a measure.
Bring the mixture to a boil over medium-high heat.
Reduce heat to low, cover, and simmer for 30-45 minutes or until all vegetables are tender.
Adjust seasoning if desired and serve hot.

Notes

Store in an airtight container in the refrigerator for up to 5 days. This soup freezes exceptionally well in portioned freezer-safe bags or containers. Feel free to add other non-starchy vegetables like zucchini or carrots to vary the texture.
